I'm trying out this software but it doesn't give me any logs of what other users are printing in the domain, even though I've setup the administrator account in the system settings. Any idea why?

This depends on the type of the printer. Note that Print Inspector doesn't support standalone network printers (which are connected directly to the network). It requires the printer to be attached to a computer where it can be monitored. If your printer is connected directly to the network, Print Inspector cannot monitor it.
