can't monitor Hyper-V adapters or any other traffic originating from the Windows kernel. This is because it runs at a higher level in the network stack to intercept network activity along with process information, while virtual network adapters are located at a lower level.
If you want to monitor Hyper-V adapters, I'd recommend a different tool called
NetWorx. It can run in two modes: adapter monitoring and application monitoring. The former will let you monitor any adapters, including virtual ones.
