I am interested in installing NetWorx on Windows Server 2019. In the installer there is an option to install a driver for per-app internet monitoring.
If I do this, will it disconnect me from the remote server I am installing it on? I don't want to lose access or cause the server to go offline at all.

By design, the per-app monitoring driver doesn't interrupt any network connections. It intercepts traffic in read-only mode purely for gathering statistics.
However, there is a very slight chance of something going wrong, such as a conflict with another driver, so to play it safe on a remote server you may be better off installing without the driver. All the remaining functionality will be fully available. On a server there's usually only a handful of services running, so there's typically no need for a per-app breakdown anyway.

In that case, you would need the per-app monitoring driver installed to track which applications are consuming your bandwidth, because on Windows there is no way to monitor how much bandwidth each process uses without a driver.
It should generally be safe to install, but since your server is remote and perhaps mission-critical, we recommend making sure you have a way to boot it into Safe Mode beforehand, just as a precaution, so you could remove the software if anything goes wrong.
